Almost Like The Real Thing

You know how you get one thing done and then another thing pops up and then another and another? That was how I felt all summer vacation long. We were busy and had lots of fun, but I am just now starting to catch my breath. I have been working on making things that I miss from home and while some have been great big giant flops (wheat bread that turned out too doughy and quickly became bread crumbs and croutons) some others have been out of this world good. Take this recipe that I found on another blog, for example, it has become a fast, snack time favorite.

Cinnamon Roll French Toast
2 slices bread (I like the raisin bread)
1 t cinnamon
1 T butter
1/2 c icing sugar, sifted
1/2 T water
few drops of vanilla

Mix together the cinnamon and butter. Butter the bread with this mixture and toast in a frying pan. Whisk together the remaining ingredients and drizzle over the warm cinnamon toast. Enjoy!

I'm not too bad this year, I'm going home next week for a visit, but a couple of years ago I was low-carbing and really wanted a sweet treat. This was yummy and tasted of home.

(Low carb) Root Beer Floats

1 glass of diet root beer
1-2 TBSP cream

Pour the cream onto the root beer. Enjoy.

It's not low calorie, but was satisfying on a hot day.

I wish I had some ideas, but having just relocated here, I'm still figuring out what ingredients are readily and easily available. Hoping to do some baking myself as fall comes on....It's been a while since you posted this, but I just found your blog. Hopefully you've found some solutions!
