What's For Dinner Wednesday 6


In the rush of the morning, toast and scrambled eggs is about as close as we get to a homecooked breafast, so every once in a while, I make breakfast for dinner. Tonight's breakfast is fried potatoes, cheese omelets, sliced tomatoes and peaches with yogurt.

The fried potatoes are really easy. We had sloppy joes and fries for lunch, so I just made extra potato wedges then. Cut up the wedges, add some onions, carrot, bacon (cooked in the microwave first) and salt and pepper to taste. I like these because they are easy to personalize. Bailey eats his with ketchup. Hubs adds garlic butter or cheese and I like mine with sour cream and cheese. Breakfast- a great way to end the day!

We love having breakfast for dinner as well. Lately, that's our standard Saturday night dinner. It's easy to plan!

You know it is...many times in my life breakfast for supper fit the ticket!!
